My mother had gastric bypass surgery almost exactly a year ago, four days before her birthday. I would love to make her a delicious dessert for her birthday this year – both to celebrate her birthday and her success with the surgery. She has lost over one hundred pounds, and is only ten pounds away from her goal weight!
She has been so good with the diet, and refrains from eating very fatty sweets, even though I know she craves them. Do you have any good desserts that are sweet (chocolatey, especially) and low-fat?
You are a nice person to help your mom out by making her something low fat and low carb. Both of those can cause dumping. I know, I just had the surgery a few weeks ago. Here’s my suggestion, but these others look really good too. She deserves a little special treatment. She has done a fine job. It also has the protein she needs. This has some fat though.
Low Carb Fudge
1 package diet chocolate pudding
2 Tb Splenda
1/2 cup whipping or heavy cream
1 Tb DaVinci/Torani SF chocolate syrup or creme de cacao
4 Tb (1/4 cup) peanut butter (creamy or crunchy, whichever you prefer)
Mix all ingredients together except peanut butter in a saucepan. Stir over low heat for 3 minutes. Add peanut butter, and continue to stir until peanut butter melts. Spray a small pan (like a mini-loaf pan or the equivalent) with Pam. Pour in the fudge and refrigerate until firm. Slice into at least 15 squares. 1.9 grams carb per square.
Get a good dark chocolate – melt it in the microwave and thin with a little skim milk. Slice bananas and strawberries for a chocolate fondue! Lots of anti-oxidants and very few fat grams!
Strawberry Cheesecake

This cheesecake tastes so New York, it’ll make you say “fuhgeddaboudit”.
Ingredients:
1 pkg lowfat cream cheese
1 pkg sugar free Strawberry Banana Jello
2 cups sugar free low fat whipped topping
Fresh Strawberries (add bananas if you like)
1 graham cracker crust made with Splenda? (see our recipe)
Preparation:
Disolve jello with 1/2 cup boiling water.
Mix into creamcheese until there aren’t any lumps. Fold the whipped topping into this mix.
Cut your strawberries (and bananas) length wise, so the cuts are flat.
Line the bottom of your crust with the fruit.
Cover with the cheesecake mix.
If you want to add another layer of fruit in the middle, that’s fine.
Top with fresh strawberries quartered. Refrigerate until set.
jello and lite cool whip. or cool whip and fresh fruit.
take a box of sugar free jello, any flavor, and prepare it as the directions say, but befor you put it in the fridge, add a container of lite whipped cream, put in bowls and chill!!! very tasty treat!!! also keeping the fat and sugar content down as prescribed
Someone that has had a gastric bypass needs to eat foods that are low in sugar or sugar free, not fat free, the sugar cannot be absorbed by the now smaller stomach and if too much sugar is eaten it will result in "dumping" (trust me you don’t wanna know) So basic anything s/f a lot of stores sell s/f pie’s or you plan on baking something your self just make it s/f or use splenda instead.
My mom has diabetes, and we always make a layered parfait for her for desserts. It tastes sooooo good you dont even miss the calories!
1 pkg no-fat no-sugar chocolate pudding
1 angel food cake (can be store bought)
16 oz. strawberries
1 tub sugar-free whip topping
Make your pudding with skim milk just like on the package and stick it in a container in the fridge to chill and set. Cube your angel food cake into bite size cubes. Once your pudding is set, take a pretty bowl (I usually use my punch bowl) and layer cake, pudding, strawberries, and whip topping in that order until you run out.
You can make this any flavor you want to! Use raspberries, blueberries, bananas, pineapple, really any kind of fruit you want to. The fat free sugar free pudding comes in little blue boxes, made by Jello. It also comes in tons of flavors, butterscotch, banana, white chocolate, chocolate, etc. Come up with some of your own combos. Our favorites are chocolate and strawberries, and blueberries and white chocolate.
